Ranman asked for these recipes--he came home with a mess of red snapper after deep sea fishing recently. I've tried both of these and they come out very good, and are easy and simple to fix. They work for many types of fish.
BAKED FISH FILETS for TWO
Place oven rack in center of oven. Preheat oven to 375°. Cover baking pan w/foil and spray rack (if used) with PAM. Wash: 2 fish filets. Place on rack. Heat 3T oleo (or salted butter) in skillet and brush SOME of it on fish Sprinkle fish liberally with garlic salt. Grate lemon rind; make lemon juice and prepare fresh dill. Mix 3 items in small bowl and spread evenly over fish: 1 teaspoon dill (or 1Tablespoon fresh dill) 1 teaspoon fresh grated lemon peel (heaping is good) 1 teaspoon fresh lemon juice (heaping is good) In skillet with melted oleo, saute ½ t minced garlic Saute 1 c soft bread crumbs (2 slices white bread toasted & blended) Add garlic salt, fresh ground black pepper Press bread crumb mixture on the top of fish Bake for 8-15 minutes--or until fish easily flakes with a fork.
**Great for fresh salmon 1” thick.
------------------------------------------------------------------------------ FISH FILETS w/DILLED VEGGIES for TWO
2 fish fillets (8 oz each) 1 Tablespoon olive oil 2 teaspoon fresh lemon juice 1 teaspoon dried dill weed (fresh is better) ¼ teaspoon pepper 1 small zucchini (5 oz) cut lengthwise in half and then crosswise into ¼ “ slices 3 plum tomatoes, each cut into quarters ½ small yellow, red or green bell pepper cut into thin strips 1 green onion, cut diagonally into slices Salt to taste Cut fish fillets to make 4 equal serving size portions. In 8-in square microwave-safe dish, arrange fish in spoke fashion. . Sprinkle with garlic salt. In medium size bowl, combine oil, lemon juice, dill and pepper. Stir in veggies and coat well. Arrange vegetables evenly over fish Cover with saran wrap (punctured) or a lid. Microwave on HIGH 7-8 min, or til fish flakes and veggies are tender. Let stand 5 min before serving.
**Good for orange roughy or red snapper.

Cherie, thanks for the recipes. I need a baking pan, though... Maybe if I walk to the store, I'll get one tonight. But I am still not too happy with you.... I can't believe you went and did that....
Horsewoman, take my advice for the first time ever and stay away from ilylo.
And Admin, show some stability, some consistency..... Why don't you just leave the damn board alone? stop wasting your time trying to control people on the TMB. You think that the TMB is your site, but it belongs to the 1000+ guests that come here daily. Stop being so creepy.

It is my understanding that the admin is attempting to ban you from the TMB?
So you are not allowed to post here.
Because of people like you who attempt to thwart the administration of the board and do not comply with the rules.
This is where you are flat-out wrong.
The admin is the administrator of the TMB. It is his board. He has FULL control to do with it as he wishes. He can delete the whole board as he wishes. It is his board to administer as he sees fit.
The TMB does not belong to guests. Guests do not administer or control the TMB.

I didn't like the way that Admin kept lying to me..... so I didn't kiss his butt, like so many here do. Admin plays with this site at the expense of everyone else. There has only been non stop complaining about the way the board is being run. Whatever, I am going to the store, because I really don't care about any of this... But get this straight, I am here, been here, going to be here, and unless your prayers get answered and I get killed going to the store, or unless the Admin stops all guest posting and also has ESP as to who people joining this site are, you may as well try to get along with me.

That's an awful thing to say, Ran. I would pretty much bet about anything that not one person here would like you to get killed, no matter how annoying you can be. ;D (eh, so can I. what of it?) Anyway, pretty awful thing to say and no one thinks that. (yeah, yeah, I know I don't speak for everyone before anyone says that...but I mean, come on. ) How do we kiss Admin's butt if we don't know who he is? I don't know anyway. I know some do, but I'm not one of them. Sometimes I'm curious, I admit...but it's really not that big of a deal. I don't kiss anyone's butt. I say what I think and try not to be rude about it....however, sometimes I fail at that too. Lastly, more people *would* not only try to get alone with you, but GET along with you if you would make some REAL attempt to follow the rules. For instance, you make posts that are really, really rude...but say in them ....look! no cussing so whatcha gonna do? After all, I'm not cussing! Last time I looked, there were more rules to the board than not cussing (I know the words get filtered, but I don't even know if that IS a rule and too sleepy to look...) Anyway, whatever. My 12 1/2 cents. Wannabe.

I have never had red snapper or been on a deep sea fishing trip before. Then heal brought up convention stew and now I am absolutely starved. Randy please tell us about your fishing trip like Cherie asked. PS did you get seasick? Gem

Since I am still starving for fish after reading over Cherie's recipes, my husband want to the store for me. He bought Gorton's battered whole fish fillets and we are having them for supper. Cooked of course! LOL

I bought a baking pan with a rack today. I am BBQ-ing tonight (london broil), but maybe tomorrow I will try to cook some of that snapper. I also have some kingfish, dunno anything about that, except they are fun to fish for.

Oh, too much... I am sooooo tired.... I will tell about it when i can.. The ocean water was blue, not green. I will say that that was the first time that I ever saw blue ocean water... a deep, rich blue... it was beautiful...
I still haven't cooked the fish... been too exhausted to cook. Plus I had to buy a few things that I needed to cook it.... a pan..lol for one.....
Cooking is like a major ordeal for me.....

I live about 25 mins from the beach here - but have good friends that live in walking distance from the beach.. It's my most favourite place in the world....The smell is just so crisp... the sand under your feet (well the nice white sand that we have here!) is absolutely devine... and the sound of the waves is ever so soothing. My kids love going to the beach to swim and build sand castles and run around with a frisbee. I highly recommend getting to the beach one day Gem! Come over to Australia and we'll take you to the Great Barrier Reef! Beautiful crystal clear water where you can see 20 meters down to the gorgeous colours of the reef... greens and blues and oranges and reds... and all the rainbow colours of the fish too. ;D Have I sold the idea to you yet?? www.divethereef.com/Galleries/gbre1/GBRE1-index.asp Vianne.
