Oh that makes me hungry for a spam sandwich. One can of spam, 1/2 cup of mayonnaise, 1/4 cup chopped sweet pickles. Use a potato masher to blend the mayo and pickle into the spam 'til you have a nice gloppy mess of pulverized spam, mayo and pickle. Cut three hard rolls in half, spread the cut side with butter, place under broiler 'til lightly toasted. Take the rolls out of the broiler, place a glob of the spam mixture on top of each of the six half-rolls. Put it in a 400 degree oven for 15 to 20 minutes until the spam is hot and starting to crisp a bit. Watch it closely and adjust the oven temp as necessary to heat the spam without burning the rolls. Yum. As a sandwich spread, not as a 'salad.' Thanks,

I don't have a recipe, but the best chicken salad sandwich I ever had was a cranberry chicken salad on cranberry walnut bread.

Our coop sells chicken salad and i think they use and make sandwiches also with it...love those chicken salad sandwiches

Hre's the basics
Most chicken spreads are made just like a tuna spread meat, mayo, sweet relish, chopped boiled egg;
Optional items: chopped onion-any kind, celery, nuts, fruit. Fruit may be sliced grapes, sliced pineapple, cranberry nuts can be chopped cashews, peanuts, pecans, sunflower seeds, etc. - but dont mix them in or they will get soggy and limp. Sprinkle on top.
