Thanksgiving Dinner -- what's on the menu?
I'm prepping ahead -- just pulled a side dish out of the oven: "Frankly, Scarlett, I Don't Give A Yam." Thanks to Cherie Kropp for calling my attention to that recipe some years ago!

PRALINE SWEET POTATOES ***Kropp Family Favorite!! aka “Frankly, Scarlett, I don’t give a yam” 3 c cooked, mashed sweet potatoes (6 med size raw potatoes=4 lbs) (Boil in skin 30 min – skin comes right off.) 2/3 c white or brown sugar ½ c oleo 2 eggs 1 T vanilla OPTIONAL: ½ c yellow or brown raisins OR ¾ c chopped dates 1 t cinnamon (optional) 1 t nutmeg (optional) 1 t ground ginger (opt) 1 t salt (opt) ¼ c orange juice or ½ c orange marmalade (opt & delicious!) Mix thoroughly and pour into 8”x8" greased baking dish/pan TOPPING: 1 c brown sugar 1/3 c oleo (some recipes say melted) 1 c chopped pecans 1/3 c flour or self rising flour Mix and work in oleo like pastry. Sprinkle over top of potatoes. Bake uncovered for 30-35 min at 350° til crust is crispy. QUANTITIES: 1 2/3 c canned yam chunks = 1 c cooked mashed = 4 servings 1 sweet potato = 2 c mashed 1 person serving = 1/3 large sweet potato

Turkey (brined overnight beforehand) Stuffing Gravy Mashed potatoes (with plenty of butter, cream cheese, sour cream (I substitute Greek Yoghurt) Green bean casserole Cranberry sauce Rolls Praline sweet potatoes Pumpkin Pie And a Midwest tradition -- a relish tray with - carrot sticks - celery sticks stuffed with peanut butter - green olives - black olives - pickled herring - sweet gherkins - alas, I cannot find the red spiced apple rings

I'm not planning the menu, though I have heard that turkey will be served. I'm making Irish Bread (my grandmother's recipe) and Gingersnaps (their grandmother's recipe), and taking a few bottles of hard cider in memory of my grandmother, who would leave the apple cider on the kitchen counter for a few days to get a bit fizzy before drinking it with a twinkle in her eye.

A couple of menus here have included a green bean casserole. I have never had that and was wondering how it was made. I love green beans so it would likely be something I'd like to try to make. Thanks.

Some of our faves for Holiday meals...
WALDORF SALAD (PLAIN or CHICKEN) HUBBY LOVES!
3 Fuji apples, unpeeled, diced 1 cup seedless green grapes, halved (optional) 1/2 cup diced celery 1 to 1-1/2 cup raisins ½ c coarsely chopped walnuts or pecans OPTIONAL: 2-3 cups cooked, SALTED cubed chicken, pineapple chunks.
DRESSING ¼ cup mayonnaise 1/2 teaspoon lemon juice 2 T sugar or 2T honey mixed with 1 t ginger 1 cup whipping cream, whipped
Place first 6 ingredients in a medium bowl; toss gently to combine. Combine mayonnaise and lemon juice in a small bowl; stir well. Whip cream with sugar/ginger. Gently stir in mayo/lemon juice. Pour dressing mixture over fruit mixture, stirring gently to combine. Cover and chill thoroughly. Serve on lettuce-lined salad plates and sprinkle walnuts on top. Yield: 6 to 8 servings.

GRAPE-BANANA FRUIT SALAD
Judge amounts needed for your meal. Use equal amounts of each fruit, go little lighter on bananas. It is great without the cantaloupe too. It is best to chill fruits before slicing.
Green seedless grapes; wash & pat dry; slice in half lengthwise. Bananas, sliced in rounds 1/3” thick, and in half again OPTIONAL: Cantaloupe chunks-bite-sized or in melon balls OPTIONAL: Chopped pecans
Whip whipped cream and add sugar to taste; OR use Cool Whip Place cut fruit in large bowl. Mix in whipped cream. Serve immediately or chill—but not too long. This salad will turn brown if left in refrigerator long, due to bananas.

CRANBERRY WALDORF SALAD
3 oz. pkg cranberry, cherry or raspberry jello 3/4 c hot water 1 can WHOLE cranberry sauce 1/2 c chopped pecans or walnuts 1 med Fuji apple – peeled and diced small ½ c seedless grapes, halved ½ c sliced celery 1 c Cool Whip (or sour cream—Chess prefers Cool Whip)—OPTIONAL (= ½ 8 oz carton)
Dissolve jello in hot water. Chill til syrupy. Gently fold in remaining ingredients and pour into serving container/s.
MOM’s CRANBERRY RELISH - HUBBY LOVES!! Makes 2 cups
16 oz. can whole-berry cranberry sauce ½ c orange marmalade ½ lemon (juice and grated rind of) ¼ c chopped pecans
Combine. Chill til ready to serve

STUFFED MUSHROOMS
2 lbs Mushrooms, Large, Fresh 1/4 c Parmesan cheese 3 T Parsley Flakes 1-1/2 t Sage 1/2 t Garlic Powder 1/2 t Pepper, Black 6 oz. StoveTop Stuffing Mix for Pork; *If use Savory Herb Stuffing Mix, leave out spices above OPTIONAL: Onions, sliced FINE; Shrimp,cooked, chopped; 4 oz Crabmeat, cooked, chopped; or Pork Sausage, cooked, crumbled
Wash mushrooms, remove and chop stems. Melt 1T olto in glass pieplate. Place mushrooms caps in plate, rounded side UP so won't hold water. Salt well with garlic salt. Microwave for 2 min. Fix stuffing per pkg. directions. Mix prepared stuffing, parmesan cheese, spices, chopped stems and desired optional items. Stuff mushrooms (ice cream scoop works well), forming dome shape. Place in pieplate, edge to edge so they won't turn over. Bake at 375° for 15-20 min; OR broil 3 min.

MOM'S EASY PECAN PIE
9 inch pie shell (uncooked) 3 eggs 1 cup white corn syrup 1 cup light brown sugar 1 cup pecans, chopped or chips (pie is much easier to cut when pecans are chopped and not left whole)
Beat eggs, add corn syrup and brown sugar to eggs and mix well Pour this mixture into pie shell. Sprinkle with pecans Bake at 350 for l hour

Thanks. green beans cream of mushroom soup fried onions on top sometimes cheese on top also To be just a bit more specific 2 cans of french cut green beans, drained 1 can cream of mushroom soup -- DON'T add water -- just the condensed soup 3/4 cup French's fried onions Mix together and put in a casserole -- an 8-inch round casserole, 2 to 3 inches deep, works well Bake at 350 for 30 minutes Pull out of the oven, add another half cup of the French's fried onions sprinkled over the top, and bake for another 15 minutes. Pull out of the oven, let cool for 10 minutes, and serve hot. That's all from memory and experience -- if someone has a REAL recipe, please post!

This year, I was thinking of just going with a simple (Libby's) pumpkin pie. But after seeing this recipe, I think I'll do both!

Loving your recipes thankyou all so much, some of the ingredients may be a little hard to find here, but I'll improvise:
I didn't have potatoes, so I substituted rice. Didn't have paprika, so I used another spice.
I didn't have tomato sauce, so I used tomato paste. A whole can not a half can - I don't believe in waste.
My friend gave me the recipe - she said you couldn't beat it. There must be something wrong with her, I couldn't even eat it.

We don't so much do Thanksgiving here, but I'm interested in any different recipes for greens....I prefer to use fresh as it is almost Summer here, or at least it is at Christmas time.
