Well it all sounds absolutely lovely, except for the liver... I never could develop a taste for it. It smelled good cooking and even the first bite wasn't bad till the texture registered. Then I was done!

Katie would be the first to tell you that I am the cook around here, but she fills in admirably when my lower extremities do not cooperate!
A while back I related about getting a huge beef liver, which I brought to nearly freezing after de-veining and trimming it before slicing into very thin slices, vacuum packing and freezing. Then I dethaw, rinse and dry thoroughly, put spices and small amount of flour in a paper bag, shake well and fry very crisp and brown in the least amount of flavorful grease possible.
Doing that tonight! Have even converted some devout liver haters to my way of fixing it with bacon and onions, condiment of choice, potatoes with garlic and fresh oregano spiced yogurt, broccoli with cheese, and cottage cheese with fresh chives, fresh cucumber slices with finely sliced green onions, a few shrimp, all soaked in diluted seasoned rice vinegar. So, must get busy! Won't ask if it appeals to anyone, because liver seems on the outs for most.
Nonetheless, wish we had friends tonight to share it with! Both Katie and I really like it, and she especially the way I fix it!
Bye now... Brought up eating sheep's liver - lambs fry and bacon with a rich pan made gravy - yum! I do not like the texture of beef liver so usually skip it. Would love to hear the results of your cheese making when you get to it - it's a bit of a 'sciencey' art.

Agree with you about the sheep and goat liver, Fred! Personally, I enjoy venison and antelope liver also, learning how to calm the gamey flavor (soak for several hours in buttermilk) Most seem to prefer calf liver to full grown beef liver. In fact, it was the objectionable texture and strong flavor of beef and bison liver that led me to experiment with "beef" liver to discover what I have. Those willing to try it always have finished an entire portion, though being told nobody would be offended if they chose not to do so.
Somehow, by cutting it in 1/8 inch slices (max), freezing, thawing, rinsing, drying, then cooking as related, the crispy pieces are grreeaat! Smile. The fresh liver must be deveined, trimmed and chilled to near freezing, though, in order to use a super sharp fillet knife to get the thin slices. I must have destroyed several pounds of liver, just getting to this, and first tried it out on hunters as their cook before attempting it on others. Hungry hunters will eat anything, smile, so I was still cautious serving it to others at first. The first question I always get is "how did you get it so crispy?!"
Now, with an induction burner, it becomes even easier to fry without burning. (I DO prefer to use a slab of ham fat for seasoning and browning.) BTW, I have been unable to find any butcher shop willing to cut it as specified, so this is a dyi effort! Chilling the hunk to near freezing and using kitchen gloves is the key to thin slicing, though! You should have seen the look in other cook's eyes though when I've held up almost paper thin slices for them to see!

Agree with you about the sheep and goat liver, Just watch out for polar bear liver. Too much of a good thing can kill you.

This is for those considering me one of their friends, bringing them up to date on this roller coaster ride downhill! Recovering from last surgery, and at least able to open both eyes!
"We" have prepared one goat for consumption. Sold two out of three of our final breeding dogs. That leaves us with just three, and no breeding male. Finding good homes for the dogs. The last tiny female Sophie, will remain at the feed store until sold or we return.
If possible, I am wishing, almost expecting but not quite, to fly at Katie's family's expense to be with her and them for a family reunion at Pensacola, Fla. over Christmas if well enough to fly on Friday. Have been on the end of both giving and receiving in life, MUCH prefer that of giving! Little choice now. G'bye for now, whether wanted to or not, I pray for each one's needs as either known, or perceived to be.

Tonight finds us in Baton Rouge. Tomorrow we will drive from Baton Rouge to Pennsacola, about a five hour trip by car. So far so good, and great to be able to see people and light when I open my eyes. Katie's mother will ride with us to the waterfront home on the beach where many of Katie's family will gather over the coming holiday. We expect to fly home on the 29th of this month.
Regarding the tiny dogs. Found homes for two males, yes I miss them, however long ago I came to understand I could not keep them all, and that I was simply entrusted with their lives to give them the best start in life as possible, finding the best home and family for them also as possible. My trained dogs neither yield to compulsive barking nor the serious tremors found in so many, and they come with instructions how to keep them that way. So it is pleasurable to see them valued by new owners, and valuing them as well. There is a training technique that transfers their love and affection from me to their new owners.
So, we have two tiny females and Tyke, my devoted service dog left. They are very good friends, so keep together as much as they can, people are so amazed at their trained behavior in life as compared to the average untrained Chihuahua. Calm, quiet, and well behaved.
Thank you, who read these "spurious" posts of mine about my life outside of 2&2ism. Over the last few years Katie's family has begun to accept me as one of them, for which I am very thankful, and eases the loneliness otherwise found in life for older crippled people like me. Good night, now.

2455 Best wishes to all, sent from Gulf Breeze, Florida for everyone's enjoyment of the coming holiday. Katie, her mom, and son have gone to visit Kay's brother and his wife who could not make the 6 hour trip one way because of his wife's terminal illness. Her brother Kevin and wife and family were not up for the trip, also due to medical conditions.
Anyway, thinking of all you that I've grown acquainted with in this forum, wishing all as much well as can be expected.

On the road part of our journey back. In Alabama just now. Flat country, humid, overcast. El Paso had an inch of snow yesterday, though it was warm at Gulf Breeze, a thousand miles to the west.
Guess the two Washington State major college football teams made good showings in the southern bowls in Texas.

Now in Mississippi. Only about 100 miles from Baton Rouge, where we will stay until flying to PDX on Tuesday. Flat country, this.
Amused, The highest point in Fla is only A little over 200', and they made that, themselves.
Learned something new in the geography field on this trip. That is: the most eastern part of the U S is in Alaska! Never knew that before! (part of Ak is to the west, past the international date line...)

For those following along, I am at rest tonight in a motel/hotel within a mile of the Baton Rouge Airport. Katie with her mom for the early evening. As "Dot" is soon 87 and also failing, we want Katie to be able to spend as much time with her as possible, and there will be tears at parting.
One last dinner scheduled with Katie's full blood brother (and the father of the Tupulo Mississippi policeman shot dead by that bank robber on Christmas Eve some time ago now.) He and his family were not able to be with us over the holiday. Then Tuesday, two flights to get back to PDX. Then the last 60 miles by car home. We will have traveled in the range of 6,000 miles!
And yes, I prayed to my God that our guardian angels might know how much we believe in and value them. Just the way we are... Trusting for good fortune and deliverance from misfortune.
Thanks again to friends here both expressing friendship (or not, Smile.)

Two tiny (about the size of our two pounds dogs) Nigerian dwarf dairy Goat doelings arrived in the goat loafing shed last night. Just an update, talk about "cute," up and bouncing around with seemingly boundless energy. One doe left to drop her kids. We wish to get one buckling to keep for breeding purposes this year so we can sell our buck. He is very handsome, little but handsome!
Tiny dogs, tiny goats and wishfully a couple of small Icelandic ewes before spring.

That is the way to go Dennis, dont give up, keep it up for as long as you are able to. It exercises both the body and the mind.I kow because I am in the same boat, so to speak. Some days are better than others, but if the will and determination is there, you will find a way even if with much difficulty. The important thing is to know your limit and honour and respect it.

Neighbor's dog just came on the property and killed my tiny Tyke, my highly trained hypoglycemic detecting service dog, and life companion 24-7 for the past 6 years. He died in my arms. He was Badly bruised but not bleeding. I will certainly miss him! He had traveled to and from Texas with me each time I went to be with Katie. Only someone who has experienced losing a Tiny two pound buddy after six plus years of constant companionship and repeated life saving experiences can/will understand, I know.

I'm sorry Dennis. I remember when I was a child and our family dog died after being mauled by a larger dog. Just the circumstances of her death made it so much worse. That and our not being able to do anything to save her.
